Genuine, Unblended & Triple Premium Quality
This is a genuine 2023/24 Australian extra virgin (cold pressed) olive oil with a high polyphenol content (>310mg/litre - >310ppm). That's approx. 3x the standard for a premium olive oil (~85mg/litre). It has a peppery & grassy taste like early harvest oils - but without the unfiltered water, seed & olive-skin residue. Note: We've supplied high polyphenol EV olive oil since 2016 (450ppm-630ppm). We no longer source these higher polyphonic oil since they give a burning sensation/taste when drizzled on food (e.g. salads or on bread). Our oil is 'kid friendly' for snack/quick foods like salads, dips & 'drizzled' bread. Or, to make mayonnaise etc.
What's different? The olive polyphenols (including oleuropeins) are the active micro-nutrients of the olive fruit & olive leaves. These polyphenols act to promote cell immunity & repair. Other polyphenols rich items are olive leaf extract (immune support), curcumin (anti-inflammatory) & resveratrol (provokes detox hormesis).
The polyphenols are also strong antioxidants that protect this olive oil during cooking (even when frying). This olive oil has a smoke-point of over 230 Celsius which is higher than coconut oil ( ~210 Celcius). The antioxidants also delay rancidity - the "use-by" period is over 3 years!
The FFA (free fatty acid) content of ordinary olive oil is the portion that causes most burning/smoking. The maximum FFA limit for premium EV olive oils is 0.8%. This ultra robust olive oil has a FFA content of just 0.2%. That is more than 3 times better the limit for premium oils.
FYI: A high smoke point doesn't mean that your food/ingredients will not burn. However, the water content in a food will normally allow high temp cooking before burning commences - e.g. pan fried potato chips.

There is no preservative, no dilution & no heating used with our high polyphenol EV olive oil.
